History of Pho
Pho (pronounced fuh) in the U.S is a Vietnamese beef base rice noodle soup. The recipe of pho originated from Northern Vietnam during the mid-1880s. It was heavy influenced by Chinese and French cooking. In fact, it is believed that pho came from a French soup called pot au feu.  The popularity of pho spread to the south in 1954.  As the recipe of pho moved south, cooks infused it with additional ingredients until it evolved in the version that is commonly served today.
